This Wine is made from one clone of Cabernet Sauvignon planted on Edgebaston. Fermented in stainless steel tanks. Maturation in new 300 litre French oak barrels for 18 months. Only 2400 bottles produced. The G.S. Cabernet Sauvignon is made in honor of George Spies, winemaker at what was then Stellenbosch Farmers Winery, and his legendary wines from the 1966 and 1968 vintage. David Finlayson, previously of Glen Carlou and now owner of Edgebaston in Stellenbosch was inspired by these wines to create his own top-end Cabernet Sauvignon and hence the GS. The wine displays Cabernet Sauvignon cassis and blackcurrent fruit on the nose as well as having a fresh minty, herbaceousness backed by mocca vanilla. A broad midpalate and long lasting flavours of Boysenberry and hints of sweet Mulberry follow through to join with the fresh Vanilla and Nutmeg spice on the finish.
