The Maillard family association with vine-growing can be traced back to 1753, when our ancestors grew vines in the neighbouring village of Chamery; although there is a document that suggests the tradition goes back even further, referring to a “measure of vines” in 1533 that was mapped out by Pierre Maillart, a sworn surveyor working in Chamery for Saint Nicaise abbey. It is now the turn of the ninth generation to take the reins, in the form of Nicolas, who returned in 2003 after completing his studies in engineering and oenology. He is thus perpetuating an almost three hundred-year-old tradition and maintains the house philosophy of bringing out the full potential of the Champagne terroirs in all wines.

Maillard fermented the Francs de Pied in oak, with no malolactic fermentation. Slow, gentle pressing using gravity flow techniques. This wine is vinified exclusively in wooden vats and with regular battonage. This Champagne has had a long maturation in wooden vats and no filtration took place before the bottling. Disgorged by hand and laid down at least three months before sale.

"The 2005 Extra Brut Blanc de Noirs Premier Cru Les Francs de Pied is an intriguing wine made from ungrafted, pre-phylloxera vines, also in Ecueil. This gorgeous, boisterous Champagne emerges with waves of sweet Pinot fruit layered into elements of chalky minerality, flowers and baking spices. The wine continues to emerge nicely in the glass, but it remains somewhat taut and in need of further time on the cork. An intense, dry finish typical of the extra brut style rounds out this engaging, multi-dimensional Champagne. This is a lovely effort.
